I stumbled upon this recipe on pinterest and it looked so good I decided to make it myself! The fries turned out crunchy on the outside and soft on the inside (like real french fries should!)
I for one am a huge avocado fan, I love it in salads, on sandwiches, in guacamole, and now as french fries! I was surprised by how well the fries held up, I was worried that they would be too soft and fall apart while I was trying to work with them, but they were perfect! I think one great tip is to make sure the avocados are not super ripe, getting some that are maybe a day or two away from peak ripeness will ensure they are easy to work with!
So here’s the recipe:
1/4 cup flour
1 tsp kosher salt
2 large eggs, beaten to blend
1 1/4 cups panko (Japanese bread crumbs)
2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-in. wedges
Grated parmesan for serving (optional—USE IT, IT MAKES THEM SO GOOD!)
1. Preheat oven to 200°.
2. Meanwhile, mix flour with 1/2 tsp. salt in a shallow plate. Put eggs and panko in separate shallow plates.
3. Sprinkle the avocado slices with the remaining ½ tsp salt. Dip each slice in flour, shaking off excess. Dip in egg, then panko to coat. Set on 2 baking sheets in single layers.
3. Bake the avocado slices for 12 minutes, use tongs to flip them after 6 minutes so each fry gets evenly cooked.
4. Take out of the oven, sprinkle with parmesan cheese and ENJOY!
